Chicken Macaroni Salad


Over breakfast, mommy asked me what I intend to cook for today. I actually do not have any plan because a) I really need to do the finishing touches of my thesis and b) I have to read a Psychology Journal and make a critique paper about it, but then I felt like the kitchen was calling me and telling me that we have all the ingredients for chicken macaroni salad; so there goes my school requirements and here comes my dish. Haha!




 Ingredients:



  1. 1/2 kilo of elbow macaroni
  2. 3 chicken breasts
  3. 1 can of pineapple chunks (drained)
  4. 1 small carrot (finely chopped)
  5. mayonnaise
  6. 6 pcs. cooked ham
  7. grapes (optional)
  8. cheese (cubed)
  9. onions (minced)
Procedures for the pasta:
  1. Boil water, add a little bit of oil to prevent the macaroni from sticking ; also add a generous amount of salt because you want your pasta to be tasty, yes?
  2. Pour the macorini, let it cook for 10-12 minutes. 
  3. Drain the macaroni. Let cold water run through it.
  4. Put it in a bowl. Set aside.
For the chicken:
  1. Of course you have to clean it first! :P
  2. Put it in a pot with water, season it with salt, pepper, and the ever trusted Magic Sarap! Lels!
  3. Let it boil for about 15 minutes.
  4. Drain.
  5. When it is cold already, then it's time for you to shred it. Set aside.
For the main event:
  1. Mix the mayo with your macaroni, make sure that it is evenly coated.
  2. Add the shredded chicken, carrots, onions, pineapple, ham, and cheese.
  3. Add salt, sugar, and pepper to taste.
  4. Since my mom loves grapes, we opted to add it on the side and topped it with more ham and cheese. :)

Bacon and Cheese Bread Rolls



Ingredients:

sliced bread
bacon
cheese
2 eggs (beaten)
bread crumbs
cooking oil

Procedures:



  1. Remove the sides of the bread.
  2. Flatten the bread using a roller pin.
  3. Layer the cheese and then the bacon on the bread.
  4. Roll the bread but make sure to apply a little pressure to maintain its shape.
  5. Dip the bread in the beaten eggs.
  6. Coat it evenly with bread crumbs.
  7. Deep fry. Low fire.
  8. Oh, use paper towels to absorb the excess oil (as usual). Serve. Eat. Enjoy! :)



  1. Ushering Ministry - Last Sunday was the first time I had served at church, and I must say that my heart is filled with so much joy that I get to dedicate my time to the Lord and to get to know more people  along the way. C'mon!!!
  2. My temporary header - It's simple, I know, but I like it, hihi. BUT if someone out there is interested on making me a purdeeyerrr header, I am so up for it! :D
  3. Vintage phone - It's cute and old school, what is it not to like about it? ;)
  4. Yay, 2013!!! - I am so excited for the coming year -fresh start, 2 semesters til my graduation, fall in love (?), breakthroughs, provisions, and a lot more things to look forward to!
  5. Girly bicycle - I've been wanting to get a bike with a basket and a unicorn in it since 2010, I am just unsure if I still know how to ride it, hrhr!
  6. Tree house - I've always dreamed of having a tree house of my own. It would be so lovely to read a book there or  just simply appreciate the surroundings from a bird's eye view.

Stuffed Potato Skins

Hi! I am back with another potato+bacon+butter recipe which is pretty much like my accidental side dish, only this time it has cheese, and presentation wise, it looks more delish and I did some scooping and ugh, I hurt my left hand, so please be careful while taking out the insides of the potatoes. ;) Ok, I talk too much!


Ingredients:

potatoes
bacon
butter
cooking oil
cheddar cheese
minced garlic
salt
pepper

Procedures:

  1. Scrub the potatoes, wash it, cut it in half.
  2. Poke the potatoes with a fork so as the insides will be cooked as well.
  3. Deep fry the potatoes.
  4. While the potatoes are cooking. Fry your bacon using butter (because butter is tastier and uhm, yeah, it has more calories, but whatever! :))
  5. Separate your bacon for the stuffing and toppings. *wink wink*
  6. Use paper towels to absorb excess oil on the potatoes. Let it cool.
  7. Use a spoon to carefully scoop the insides of the potatoes. Reserve the ones that you had scooped for later, leaving about 1/4 of an inch of potato on the skin.
  8. Brush a fair amount of butter on the insides of the skin.
  9. For the stuffing, mash the potatoes that you had scooped earlier, bacon bits (with a fair amount of the butter that you used to fry it), and minced garlic. Mix everything. 
  10. Season it with salt and pepper.
  11. In a toaster pan, evenly distribute the minced garlic, and spread a fair amount of butter into it.
  12. Stuff your potato skin with the mixture you had made.
  13. Top it off with cheese and bacon, and all the pretty things in the world.
  14. Bake it and since I do not have a baking oven, I am using our dependable oven toaster, switch it to 10.
  15. Drum roll, please. 
  16. And voila, let the potato feast begin! :)

Christmas in bullets



Hai there reader! I hope you enjoyed your day with your loved ones, and I know for sure that you are in a food coma because the table is overflowing with goodies, and you just find it so hard to say no, hihi. Here's a recap of my day:
  • Carl and I slept early because a) mommy is not home b) we decided to just have a Christmas lunch instead of the usual Noche Buena.
  • Surprised bibi with my gifts for him, hihi.
  • I cannot  connect to the internet because Globe acted up today (of all days)!
  • Woke up at 4.30am.
  • Slept again.
  • Woke up at 9am.
  • Cooked for our lunch.
  • Cooked baked mac (for the first time), my signature side dish, and that pork with red sauce (I am still undecided on what to call it).
  • Pork Scarlet sounds good, yes? 
  • A friend said that I am a certified mom already because yay, you see, I pulled it off!
  • Oh, a friend from primary school asked me for the recipe of my baked potatoes, it's flattering, hihi.
  • She even tagged me the photo on facebook, kilegz! :))
  • Spent time with lola, she looks better now than the last time I saw her.
  • I wish she comes back home already, this place is not the same without her.
  • Went to the grocery to buy some stuff.
  • Our netbook died on us, sadz!
  • Received these books from my cousin.
  • Lookie, it's Ramon and Lourd! ♥♥♥
  • Prepared dinner ala Nanot's. :)
  • And yeah, booze, which I ended up pouring down the drain. :))
  • Nothing grand but I am happy that I am with my family, though it would have been happiest if kuya and his family were here.
  • Also, it's our 4th Christmas without Daddy, I miss him every day, but I know he is in a better place already.
  • And I wouldn't have it any other way. 
  • Happy birthday, Jesus! Through your birth, You saved us! :)
  • And that reason is enough for us to celebrate.

The Accidental Side Dish

I was supposed to make crispy potato wedges, but then I can't achieve the golden brown that I want for my potatoes; there is also no sour cream powder available at the nearby grocery so I had to think of alternative ways so as not to end up throwing these babies away. I first thought of bacon, hmmm. Potatoes + bacon is without a doubt a perfect combination, but how about adding some garlic and butter? Well, that is something! Say hello to my accidental side dish which turned out to be everybody's favorite here at home that I had to make 3 batches of it in one day. Yaaayyy, bacon saved the day!!! :))



Oh, I am calling this baked buttered potatoes with bacon bits :D

Ingredients:

1 kg of potatoes (cut in wedges)
1/4 kg belly bacon (chopped into bits)
around 8 cloves of garlic (minced)
cooking oil
butter or Star margarine
salt
pepper

Procedures:
  1. Clean the potatoes and put it in a bowl of water
  2. Fry your bacon using butter until it is crispy already
  3. Preheat the other pan for your potatoes (oil should be enough for deep frying)
  4. Drain your potatoes
  5. Fry it
  6. Use paper towel to absorb the excess oil on the potatoes
  7. Since I do not have a baking oven, I am using our dependable oven toaster, switch it to 10
  8. In the toaster pan, evenly distribute the minced garlic, and spread a fair amount of butter into it
  9. Season with salt and pepper
  10. Place the potatoes on the pan and then bake it.
  11. Pour in the potatoes in a bowl, if you want it buttery you may then also add the butter that was left on the pan, and then sprinkle it with the bacon bits you fried earlier
  12. It's nomnomz time, but wait! The dip!
For the garlic mayo dip:

mayonnaise
minced garlic
  1. Simply mix the garlic and the mayo. :))


Heee, Mommy loved it so much! I can say  that day by day,  I am seeing the improvement of my cooking skills and I am so kilegz, haha! I shall try and then master kaldereta pretty soon!

Graham Cake/Cocktails

My friends and I made some ref cake for our Christmas party last Tuesday, it is so easy, you can do it with eyes closed. LOLJK, but yeah, I am still sharing it anyway because a) I know you love desserts b) it's affordable c) you can bring it to potlucks, or serve it to your loved ones this Holiday season. :)


Ingredients:

3 packs of graham crackers
1 pack of crushed graham
2 big cans of condensed milk
2 big cans of Nestle cream

For the toppers (optional):

Oreos
strawberries or peaches or mangoes or fruit cocktail

Procedures:
  1. Chill the cream and condensed milk
  2. Once it is chilled already, prepare the cream mixture by mixing the Nestle cream and condensed milk in a bowl, whip it.
  3. Place a layer of graham crackers on a square or rectangular container leaving no space between each cracker.
  4. Spread the cream mix on top of the layer of graham crackers
  5.  Add another layer of graham crackers and cream mix (just repeat procedures 3 and 4 until you make 4 layers) 
  6. Pour some crushed graham just enough to cover the topmost layer of the crackers.
  7. Put it in the refrigerator for about 2-3 hours
  8. You may now add the toppings of your choice
  9. Serve chilled.
  10. Enjoy! :)
So, here's another way to serve it, this time you have to make a crust, here are the ingredients and procedures:


crushed graham
around 6 tablespoons of melted butter
sugar

  1. Melt the butter in a pan (low fire)
  2. In a bowl, pour in the melted butter gradually with the crushed graham. Mix it.
  3. Add sugar to taste.
  4. Basically this will serve as your base, place the mixture in a cocktail glass
  5.  Spread the cream mix on top of the layer 
  6. Pour in some crushed graham (repeat procedures 5 and 6)
  7. Repeat procedures 7-10 :)

Stories behind IG photos


Most of the time, my friends and I make our thesis together because a) we can ask questions to each other, compare notes, etc. and b)  it's more fun to have company. Last Thursday, they came over for another thesis writing session (LOL, how productive!), laughter, and yes, food tripping. I am glad to inform you that I am finally done with the major chapters of my thesis, I just have to finish the table of contents and the acknowledgement because really, I can't think of the exact words on how to thank those people who had helped me along the way to accomplish that piece of work, I'll work on it this Christmas vacation. :)


Served shanghai and kwek-kwek for merienda last Saturday, thanks to youtube's how to videos. Mommy is fascinated about my newfound love for "cooking". I feel ye, mother! LOL art!


It's been a long time since I last read a  Cosmopolitan book and I am actually missing the quick-read-type which won't let me invest too much emotions because I easily get attached to fictional characters. Mommy bought me this and I am pretty impressed with the book cover, so posh! I shall read this hopefully next week and make a review about it, hihi.




Today was the opening of Victory Christian Fellowship at Santa Cruz, Laguna which is approximately 10 minutes away from our house. I had waited so long for this day to come, two years to be exact. I know it's not even an excuse that LB or Calamba is too far from us, I know it was also not an acceptable alibi that I used to have Sunday classes for two semesters  that's why I had been out of the loop, my bad.

I am just glad that we have a God who accepts us no matter how many times we turn our backs on Him. I am delighted that my family and I are connected again. I am so pumped up that I am here to stay, that I am finally ready to serve Him, and that I am letting him take over my life for He knows the desires of my heart. 

P.S. I joined the ushering team, yay!

My god daughter came over and showed me her mad dancing skills to the tune of what else, but Gangnam Style, hrhr, so cute this little girl!

Just when I was about to let Carlo sleep, we heard someone singing Hey Jude by our window, and without a doubt, I know the guy's voice, my friend, whom I consider to be my  brother from another mother came over all the way from Manila for a short chitchat, he said he'll be back tomorrow to drop off my Beatles shirt. :)

I had a wonderful week and I know that greater things are about to unfold! C'mon, let's celebrate life! :)

Bacon and Egg Toast Cups

Bacon makes everything better and whatever argument you have about it is invalid! I am sharing this recipe which is perfect for breakfast or even merienda




Ingredients:

bacon
eggs
mini buns
salt
pepper
cooking oil

Procedure:

1. Cut  out the middle part of the bread into square (just enough for the egg to set).
2. Preheat your oven toaster.
3. Fry the bacon until it is kind of crispy already (LOL, kind of).
4. Slice the bacon into 4
5. Assemble the bacon in the bun in an "X" formation , LOL.
6. Now, this is the hardest part, crack in the egg slowly, as you may not be able to fit all of the white in the the bun.
7. Add salt and pepper.
8. Toast until the egg is cooked (my son loves it oozing).
9. Eat to your heart's content. :)

My week in snippets and photos



It was my prelim examinations last Thursday and Friday, so I was just basically reviewing the entire week. Thanks to mommy for giving me these supplies which actually helped me to get through the wee hours just to study and if you are wondering, no, I did not consume everything in one sitting!


Then came Friday, ate out with friends. Ohai, Nanot`s pizza, you kept us waiting for like 30 minutes!



Last week, Carlo requested that I make kwek-kwek for my Saturday cooking, but something happened, he had these rashes last Tuesday and then the doctor advised that he should not eat chicken, seafood, egg, chocolates, etc., for a week so as not to trigger whatever ``allergy`` he has. So, I just decided to make some  graham cake topped with Crunch bits and pink flowers because I am so gaaayyyy!!! :))

Side story:

Scenario: Carl and I are devouring the graham cake. Looks like he wants to eat the chocolate on top.

Me: go ahead. (though he's really not allowed to it but yeah, i can be lenient sometimes)

Carl: *thinking* nah, i have to respect the doctor's order.

Hahaha. Kyot-kyot!


Mommy was so busy today so I offered to cook for our lunch. Yes, you are reading it right! I finally learned how to cook a decent dish! Yay, beef broccoli! This viand reminds me so much of my dad, he will surely be proud of me, haha! Also, pwede na ko mag-asawaaa!!!:))



I rarely post my photo because I just don`t feel like it, but since my hair looked extra nice today, hullo mirror shot foreverrrr!!!


Carl, you so big na! You even called your get-up as the ``binata porma``, hihi! You so gwapo, anak! Mommy loves you so much!!! Do not grow up too fast!!!



Went to my goddaughter, Daney`s party today, and this was the only photo I had taken, such a fail moment for my photography career, chause! :))

25 Things To Do Before You Turn 25


People had been reblogging this post on tumblr for days now, it's like telling me that it should also have a space in my blog. Though I am already way older than 25, I am still sharing it anyway. :)

1. Make peace with your parents. Whether you finally recognize that they actually have your best interests in mind or you forgive them for being flawed human beings, you can’t happily enter adulthood with that familial brand of resentment.

2. Kiss someone you think is out of your league; kiss models and med students and entrepreneurs with part-time lives in Dubai and don’t worry about if they’re going to call you afterward.

3. Minimize your passivity.

4. Work a service job to gain some understanding of how tipping works, how to keep your cool around assholes, how a few kind words can change someone’s day.

5. Recognize freedom as a 5:30 a.m. trip to the diner with a bunch of strangers you’ve just met.

6. Try not to beat yourself up over having obtained a ‘useless’ Bachelor’s Degree. Debt is hell, and things didn’t pan out quite like you expected, but you did get to go to college, and having a degree isn’t the worst thing in the world to have. We will figure this mess out, I think, probably; the point is you’re not worth less just because there hasn’t been an immediate pay off for going to school. Be patient, work with what you have, and remember that a lot of us are in this together.

7. If you’re employed in any capacity, open a savings account. You never know when you might be unemployed or in desperate need of getting away for a few days. Even $10 a week is $520 more a year than you would’ve had otherwise.

8. Make a habit of going outside, enjoying the light, relearning your friends, forgetting the internet.

9. Go on a 4-day, brunch-fueled bender.

10. Start a relationship with your crush by telling them that you want them. Directly. Like, look them in the face and say it to them. Say, I want you. I want to be with you.

11. Learn to say ‘no’ — to yourself. Don’t keep wearing high heels if you hate them; don’t keep smoking if you’re disgusted by the way you smell the morning after; stop wasting entire days on your couch if you’re going to complain about missing the sun.

12. Take time to revisit the places that made you who you are: the apartment you grew up in, your middle school, your hometown. These places may or may not be here forever; you definitely won’t be.

13. Find a hobby that makes being alone feel lovely and empowering and like something to look forward to.

14. Think you know yourself until you meet someone better than you.

15. Forget who you are, what your priorities are, and how a person should be.

16. Identify your fears and instead of letting them dictate your every move, find and talk to people who have overcome them. Don’t settle for experiencing .000002% of what the world has to offer because you’re afraid of getting on a plane.

17. Make a habit of cleaning up and letting go. Just because it fit at one point doesn’t mean you need to keep it forever — whether ‘it’ is your favorite pair of pants or your ex.

18. Stop hating yourself.

19. Go out and watch that movie, read that book, listen to that band you already lied about watching, reading, listening to.

20. Take advantage of health insurance while you have it.

21. Make a habit of telling people how you feel, whether it means writing a gushing fan-girl email to someone whose work you love or telling your boss why you deserve a raise.

22. Date someone who says, “I love you” first.

23. Leave the country under the premise of “finding yourself.” This will be unsuccessful. Places do not change people. Instead, do a lot of solo drinking, read a lot of books, have sex in dirty hostels, and come home when you start to miss it.

24. Suck it up and buy a Macbook Pro.

25. Quit that job that’s making you miserable, end the relationship that makes you act like a lunatic, lose the friend whose sole purpose in life is making you feel like you’re perpetually on the verge of vomiting. You’re young, you’re resilient, there are other jobs and relationships and friends if you’re patient and open.
